2 pounds boneless chicken thighs or breasts,
2 tablespoons olive oil,
2 tablespoons all-purpose flour,
1 medium onion, diced,
3 cloves garlic, minced,
1/2 cup pepperoncini juice,
1 cup heavy cream,
1/2 cup sliced pepperoncini,
1/2 cup chicken broth,
2 tablespoons butter,
1 teaspoon dried oregano,
Salt and pepper to taste,
Fresh parsley for garnish
Instructions
Pat chicken dry and season with salt and pepper. Let rest at room temperature 15-20 minutes. Lightly dredge in flour.
Heat olive oil in large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and cooked through (165°F). Remove and set aside.
In same pan, sauté onions and garlic until fragrant. Add pepperoncini juice to deglaze. Add cream, pepperorcini, and oregano. Simmer until thickened.
Return chicken to pan, simmer 2-3 minutes. Stir in butter, adjust seasoning. Garnish with parsley and serve immediately.
