  • 2 pounds boneless chicken thighs or breasts,
  • 2 tablespoons olive oil,
  • 2 tablespoons all-purpose flour,
  • 1 medium onion, diced,
  • 3 cloves garlic, minced,
  • 1/2 cup pepperoncini juice,
  • 1 cup heavy cream,
  • 1/2 cup sliced pepperoncini,
  • 1/2 cup chicken broth,
  • 2 tablespoons butter,
  • 1 teaspoon dried oregano,
  • Salt and pepper to taste,
  • Fresh parsley for garnish

Instructions

  • Pat chicken dry and season with salt and pepper. Let rest at room temperature 15-20 minutes. Lightly dredge in flour.
  • Heat olive oil in large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden and cooked through (165°F). Remove and set aside.
  • In same pan, sauté onions and garlic until fragrant. Add pepperoncini juice to deglaze. Add cream, pepperorcini, and oregano. Simmer until thickened.
  • Return chicken to pan, simmer 2-3 minutes. Stir in butter, adjust seasoning. Garnish with parsley and serve immediately.
