Creamy Ricotta Egg Toast

A quick, creamy, and satisfying breakfast featuring toasted bread topped with whipped ricotta and a perfectly cooked egg.

  • 4 slices sourdough or country bread
  • 1 cup ricotta cheese
  • 1 tbsp olive oil
  • 4 large eggs
  • 1 tbsp butter
  • Salt and black pepper, to taste
  • Fresh herbs (parsley, chives, or basil), chopped
  • Optional toppings: chili flakes, drizzle of honey, or grated Parmesan

Instructions

  • 1. Toast the bread slices until golden and crisp.
  • 2. In a bowl, season ricotta with salt, pepper, and a drizzle of olive oil; whip until smooth.
  • 3. Spread whipped ricotta generously over each toast.
  • 4. In a skillet, melt butter over medium heat and cook eggs to desired doneness (fried, sunny-side up, or poached).
  • 5. Place one egg on each ricotta toast.
  • 6. Sprinkle with herbs and any desired toppings.
  • 7. Serve immediately while warm.

  • For a lighter version, use low-fat ricotta.
