  • 4 cloves of garlic
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pasta of your choice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the red bell peppers by cutting them in half and removing the seeds.
  3. Drizzle the olive oil over the peppers and garlic.
  4. Roast in the oven for 20-25 minutes until tender and slightly charred.
  5. Cool the roasted peppers and garlic slightly.
  6. Blend the roasted peppers, garlic, heavy cream, and Parmesan cheese until smooth.
  7. Heat the blended sauce in a pan over low heat.
  8. Cook the pasta according to package instructions.
  9. Combine the drained pasta with the creamy sauce and toss to coat.
  10. Serve immediately, garnished with extra Parmesan and fresh basil if desired.
