  • Turkey Meatballs:
  • 1 lb ground turkey (93% lean)
  • 2 cups fresh baby spinach (chopped fine)
  • ½ cup panko breadcrumbs
  • 1 large egg
  • ¼ cup grated parmesan cheese
  • 2 garlic cloves (minced)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • Creamy Spinach Sauce:
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated parmesan cheese
  • ½ tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • 1. Make meatballs: In large bowl, combine ground turkey, chopped spinach, breadcrumbs, egg, parmesan, garlic, Italian seasoning, salt, and pepper. Mix gently with hands until just combined. Form into 1.5-inch meatballs (about 20 total).
  • 2. Heat olive oil in large skillet over medium heat. Brown meatballs 2-3 minutes per side (don’t need to cook through). Remove to plate.
  • 3. In same skillet, sauté onion 3 minutes until soft. Add garlic 30 seconds until fragrant. Add spinach, cook 1-2 minutes until wilted.
  • 4. Pour in heavy cream and chicken broth, scraping up browned bits. Stir in parmesan and Italian seasoning. Simmer 3-4 minutes until thickened.
  • 5. Return meatballs to skillet, spoon sauce over. Cover and simmer 8-10 minutes until meatballs reach 165°F internal temp. Season with salt and pepper.

Notes

  • 93% lean turkey prevents dry meatballs; don’t use extra lean.
  • Chop spinach very fine so meatballs hold shape.
  • Heavy cream creates silky sauce; half & half works but thinner.
  • Make ahead: Meatballs freeze perfectly raw or cooked.
  • Serve over zucchini noodles, rice, or mashed cauliflower for low-carb.
