Creamy Tomato Chicken Breast

A delicious and comforting dish featuring juicy chicken breasts in a creamy tomato sauce, perfect for busy weeknights or weekend gatherings.

  • ½ inch thick sliced baby potatoes
  • ¼ cup frying oil
  • Salt (to taste)
  • Garlic powder
  • Paprika
  • 1 dried rosemary
  • 400 g cherry tomatoes
  • 2 tbsp olive oil
  • 1 whole garlic bulb
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (adjust to taste)
  • Freshly ground black pepper (to taste)
  • Fresh basil leaves (chopped)
  • ¼ cup heavy cream
  • Chicken breast
  • Olive oil
  • Salt
  • Garlic powder
  • Paprika
  • Oregano
  • Black pepper

Instructions

  1. Begin with the potatoes. Wash and slice the baby potatoes into ½ inch thick slices.
  2. Heat the frying oil in a large skillet over medium heat.
  3. Once hot, add the sliced potatoes. Sprinkle salt, garlic powder, and paprika over them.
  4. Cook the potatoes for about 15-20 minutes, turning occasionally until they are golden brown and crisp.
  5. Remove the potatoes from the skillet and set them aside on a paper towel to absorb any excess oil.
  6. Preheat your oven to 400°F (200°C).
  7. Rinse and halve the cherry tomatoes.
  8. In a baking dish, place the halved tomatoes, drizzle with olive oil, and season with salt, garlic, Italian seasoning, red pepper flakes, and black pepper.
  9. Take a whole garlic bulb, slice the top off, and place it in the dish with the tomatoes.
  10. Roast in the oven for about 20 minutes or until the tomatoes are soft.
  11. Pat the chicken dry with paper towels.
  12. Season both sides of the chicken with salt, garlic powder, paprika, oregano, and black pepper.
  13. Heat a drizzle of olive oil in a large skillet over medium-high heat.
  14. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side.
  15. Remove the chicken from the skillet and let it rest for a few minutes.
  16. Squeeze the roasted garlic into the baking dish with the tomatoes.
  17. Add the heavy cream to the tomato mix and stir well.
  18. Slice the rested chicken breast and add it to the sauce.
  19. Serve immediately alongside the crispy pan-fried potatoes and garnish with chopped fresh basil.

Notes

Use fresh ingredients for the best flavor. Adjust spices to taste and consider adding spinach or mushrooms for variations.
