Creamy Tuscan Ravioli Soup Recipe

A rich and cozy Creamy Tuscan Ravioli Soup made with Italian sausage, tomatoes, garlic, spinach, and cheesy ravioli in a silky cream broth. A hearty one-pot dinner ready in under 30 minutes!

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 lb Italian sausage (mild or spicy)
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (9–12 oz) package refrigerated cheese ravioli
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  • 1. Heat olive oil in a large pot over medium heat and sauté onion until softened.
  • 2. Add sausage, breaking it up with a spoon, and cook until browned.
  • 3. Stir in garlic, Italian seasoning, and red pepper flakes.
  • 4. Pour in chicken broth and diced tomatoes and bring to a gentle simmer.
  • 5. Add ravioli and cook according to package directions, about 4–6 minutes.
  • 6. Reduce heat and stir in heavy cream, spinach, and Parmesan until spinach wilts and soup becomes creamy.
  • 7. Taste and season with salt and pepper before serving.

Notes

  • Substitute tortellini for ravioli.
  • Use half-and-half instead of heavy cream for a lighter soup.
  • Add sun-dried tomatoes for extra Tuscan flavor.
