  • 1 loaf brioche or challah bread, sliced thick
  • 5 large eggs
  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 3 tbsp unsalted butter
  • Extra sugar for caramelizing

Instructions

  • 1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • 2. Arrange thick slices of brioche or challah in the dish in a single layer.
  • 3. In a bowl, whisk together eggs, heavy cream, milk, sugars, vanilla, and salt until smooth.
  • 4. Pour custard mixture evenly over the bread, pressing gently to absorb.
  • 5. Let soak for at least 30 minutes (or overnight in the fridge for deeper flavor).
  • 6. Dot with butter and bake for 35–40 minutes until golden and set.
  • 7. Sprinkle sugar evenly over the top and use a kitchen torch to caramelize until crisp.
  • 8. Serve warm with berries or a drizzle of maple syrup.

Notes

  • For best results, use slightly stale bread so it absorbs the custard well.
  • You can prep this the night before and bake in the morning.
