  • 3 medium zucchinis
  • 2 egg whites (mixed with 1 teaspoon Cajun seasoning)
  • 1 cup Parmesan cheese (mixed with 1 tablespoon Cajun seasoning)
  • 1/2 cup mayo
  • 2 tablespoons heavy cream
  • 2 tablespoons lemon juice
  • 1 tablespoon Cajun seasoning
  • 2 egg yolks (beaten)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the zucchinis by washing them thoroughly and cutting them into fry-sized sticks.
  3. Mix the egg whites with 1 teaspoon of Cajun seasoning in a small bowl.
  4. Coat each zucchini fry in the seasoned egg whites.
  5. Dip the coated fries into the mixed Parmesan cheese and Cajun seasoning, pressing the mixture onto the fries for better adhesion.
  6. Line a baking sheet with parchment paper and spread the fries in a single layer.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  8. Combine mayo, heavy cream, lemon juice, Cajun seasoning, and beaten egg yolks in a bowl to make the aioli.
  9. Chill the aioli until ready to serve.

Notes

Serve fries warm with Cajun aioli on the side. Ideal as a snack or side dish with grilled meats.
