Crispy Baked Parmesan Cauliflower Bites

Crispy, golden cauliflower bites coated in a savory Parmesan crust baked, not fried! A deliciously healthy snack or side dish that’s perfect for dipping and sharing.

  • 1 medium head cauliflower, cut into florets
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Olive oil spray
  • Fresh parsley, chopped (for garnish)
  • Marinara or ranch sauce, for dipping

Instructions

  • 1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • 2. In a bowl, whisk eggs until smooth.
  • 3. In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  • 4. Dip each cauliflower floret in egg, then coat with the Parmesan-breadcrumb mixture.
  • 5. Place coated florets on the prepared baking sheet and lightly spray with olive oil.
  • 6. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  • 7. Garnish with fresh parsley and serve warm with your favorite dip.

Notes

  • For extra crispiness, broil for the last 2–3 minutes.
  • Use gluten-free breadcrumbs if needed.
  • Great as a healthy snack, appetizer, or veggie side dish.
