- 1 medium head cauliflower, cut into florets
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (panko or regular)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp salt
- Olive oil spray
- Fresh parsley, chopped (for garnish)
- Marinara or ranch sauce, for dipping
- 1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- 2. In a bowl, whisk eggs until smooth.
- 3. In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- 4. Dip each cauliflower floret in egg, then coat with the Parmesan-breadcrumb mixture.
- 5. Place coated florets on the prepared baking sheet and lightly spray with olive oil.
- 6. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
- 7. Garnish with fresh parsley and serve warm with your favorite dip.
