A delicious and healthy meal featuring crispy salmon bites with a spicy Bang Bang sauce, served with fresh vegetables, creamy avocado, and fluffy rice.

Ingredients

  • Salmon fillets
  • Rice (steamed)
  • Fresh vegetables (e.g., bell peppers, cucumbers, carrots)
  • Avocado
  • Flour (for coating)
  • Egg (for coating)
  • Panko breadcrumbs
  • Bang Bang sauce (mayonnaise, sweet chili sauce, sriracha)
  • Salt
  • Pepper
  • Olive oil or cooking oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the salmon by cutting it into bite-sized pieces and seasoning with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs in separate bowls.
  4. Bread each salmon piece first in flour, then egg, and finally panko breadcrumbs.
  5. Arrange the coated salmon on a baking sheet lined with parchment paper, drizzling with olive oil.
  6. Bake for 15-20 minutes until golden brown and crispy.
  7. Make the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, and sriracha.
  8. Assemble the bowls with steamed rice, crispy salmon bites, fresh vegetables, avocado slices, and drizzle with Bang Bang sauce.

Notes

Serve with lime wedges and fresh herbs for added flavor. Leftovers can be stored in separate containers for up to 3 days.
