- 1 lb Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- Dijon Aioli:
- 1/4 cup mayonnaise
- 2 tablespoons olive oil
- 1 1/2 tablespoons Dijon mustard
- 1 teaspoon minced garlic
- 1/2 teaspoon dried parsley
- Salt and pepper to taste
- 1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- 2. In large bowl, toss Brussels sprouts with olive oil, garlic powder, chili powder, salt, and pepper.
- 3. Arrange in single layer on baking sheet, cut side down.
- 4. Roast 18-20 minutes, flipping halfway, until crispy and golden.
- 5. While roasting, whisk together mayonnaise, olive oil, Dijon mustard, minced garlic, parsley, salt, and pepper for aioli.
- 6. Serve hot Brussels sprouts with Dijon aioli for dipping.
