Crispy Cheesy Corn Fritters: How to Make Perfect Golden Crunch

Crispy, golden corn fritters loaded with sweet corn and gooey melted cheese crunchy on the outside, tender on the inside, and perfect as an appetizer, snack, or side dish.

  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 large eggs
  • 2 green onions, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp milk
  • Oil for frying

Instructions

  • 1. In a large bowl, combine corn kernels, shredded cheese, and green onions.
  • 2. Add flour, cornstarch, garlic powder, paprika, salt, and black pepper; mix well.
  • 3. Stir in eggs and milk until a thick batter forms.
  • 4. Heat oil in a skillet over medium heat.
  • 5. Scoop spoonfuls of batter into the hot oil and gently flatten.
  • 6. Fry for 2–3 minutes per side until golden brown and crispy.
  • 7. Transfer fritters to a paper towel-lined plate to drain excess oil.
  • 8. Serve hot with your favorite dipping sauce.

Notes

  • For extra crunch, add 1–2 tablespoons of cornmeal to the batter.
  • Pepper jack cheese adds a spicy twist.
  • Serve with sour cream, ranch, or sweet chili sauce.
