Crispy Dill Pickle Parmesan Chicken

Juicy chicken marinated in tangy dill pickle juice, coated with crispy Parmesan breadcrumbs, and baked to golden perfection.

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (for marinating)
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil or melted butter
  • Fresh dill and pickle slices for garnish (optional)

Instructions

  • 1. Marinate chicken in pickle juice for at least 1 hour (up to overnight).
  • 2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  • 3. Mix breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  • 4. Remove chicken from marinade and pat dry.
  • 5. Brush chicken with olive oil or butter, then coat in breadcrumb mixture.
  • 6. Place chicken on baking sheet and bake 25–30 minutes until golden and internal temp reaches 165°F (74°C).
  • 7. Garnish with fresh dill or pickle slices and serve hot.

Notes

  • For extra crunch, use panko breadcrumbs.
  • Air fryer option: cook at 375°F (190°C) for 15–18 minutes, flipping halfway.
  • Pairs perfectly with ranch or a creamy dill dipping sauce.
