- 1 cup dill pickle juice (for marinating)
- 1 cup breadcrumbs (panko or regular)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil or melted butter
- Fresh dill and pickle slices for garnish (optional)
- 1. Marinate chicken in pickle juice for at least 1 hour (up to overnight).
- 2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- 3. Mix breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- 4. Remove chicken from marinade and pat dry.
- 5. Brush chicken with olive oil or butter, then coat in breadcrumb mixture.
- 6. Place chicken on baking sheet and bake 25–30 minutes until golden and internal temp reaches 165°F (74°C).
- 7. Garnish with fresh dill or pickle slices and serve hot.
