- 1 large head cauliflower
- 1/4 cup olive oil
- 2 tablespoons grated Parmesan (for brushing)
- 3 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon chili flakes
- 1/2 cup freshly grated Parmesan cheese
- Fresh chives or parsley for garnish
- 1. Preheat oven to 450°F (230°C). Line baking sheet with parchment paper.
- 2. Trim cauliflower leaves and cut into 1-inch thick steaks (2-4 steaks from 1 head).
- 3. Whisk olive oil, 2 tbsp grated Parmesan, garlic, paprika, onion powder, salt, and chili flakes.
- 4. Brush both sides of steaks generously with mixture. Press one side into fresh grated Parmesan.
- 5. Place Parmesan side down on baking sheet. Bake 10 minutes.
- 6. Reduce oven to 425°F (220°C). Flip steaks and bake 20-25 minutes more until golden and crispy.
- 7. Garnish with chives and serve immediately.
