  • 1 large head cauliflower
  • 1/4 cup olive oil
  • 2 tablespoons grated Parmesan (for brushing)
  • 3 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili flakes
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh chives or parsley for garnish

Instructions

  • 1. Preheat oven to 450°F (230°C). Line baking sheet with parchment paper.
  • 2. Trim cauliflower leaves and cut into 1-inch thick steaks (2-4 steaks from 1 head).
  • 3. Whisk olive oil, 2 tbsp grated Parmesan, garlic, paprika, onion powder, salt, and chili flakes.
  • 4. Brush both sides of steaks generously with mixture. Press one side into fresh grated Parmesan.
  • 5. Place Parmesan side down on baking sheet. Bake 10 minutes.
  • 6. Reduce oven to 425°F (220°C). Flip steaks and bake 20-25 minutes more until golden and crispy.
  • 7. Garnish with chives and serve immediately.

Notes

  • Pat cauliflower dry for maximum crispiness.
  • Use thick steaks for steak-like texture.
  • Perfect with marinara or tahini sauce.
  • Great meatless main for 2 or side for 4.
