Ingredients

  • 2 cups shredded kale or mixed greens
  • 1 medium carrot, julienned
  • 1 cup cucumber, diced
  • 1/2 cup red cabbage, shredded
  • 1/4 cup radishes, thinly sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1 avocado, diced
  • For the dressing:
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup
  • Salt and pepper to taste
  • Water to thin as needed

Instructions

  • 1. In a large bowl, combine kale, carrot, cucumber, cabbage, radishes, seeds, and avocado.
  • 2. In a small bowl, whisk tahini, lemon juice, apple cider vinegar, maple syrup, salt, and pepper until smooth. Add water a little at a time to reach desired consistency.
  • 3. Pour dressing over salad and toss well to coat.
  • 4. Serve immediately for best crunch and freshness.
