- 2 cups shredded kale or mixed greens
- 1 medium carrot, julienned
- 1 cup cucumber, diced
- 1/2 cup red cabbage, shredded
- 1/4 cup radishes, thinly sliced
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1 avocado, diced
- For the dressing:
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup
- Salt and pepper to taste
- Water to thin as needed
- 1. In a large bowl, combine kale, carrot, cucumber, cabbage, radishes, seeds, and avocado.
- 2. In a small bowl, whisk tahini, lemon juice, apple cider vinegar, maple syrup, salt, and pepper until smooth. Add water a little at a time to reach desired consistency.
- 3. Pour dressing over salad and toss well to coat.
- 4. Serve immediately for best crunch and freshness.
