- 1 large cucumber, thinly sliced
- 1/2 cup cream cheese, softened
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp fresh dill or chives, chopped
- Salt and pepper to taste
- 8 slices white or whole grain bread
- Optional: lettuce leaves
- 1. In a bowl, mix cream cheese, mayonnaise, lemon juice, dill, salt, and pepper.
- 2. Spread the mixture evenly on each slice of bread.
- 3. Layer cucumber slices on half of the bread slices.
- 4. Top with lettuce leaves if desired.
- 5. Cover with remaining slices of bread.
- 6. Cut sandwiches into halves or quarters and serve.
Notes
- Use a mandoline slicer for thin cucumber slices.
- Drain cucumber slices if overly watery.
- Add smoked salmon or turkey for variation.
- Best served fresh but can be refrigerated.
