Cucumber Salad Sandwiches

Cucumber Salad Sandwiches are light, refreshing sandwiches made with crisp cucumbers and creamy dressing, perfect for tea parties or a light lunch.

Ingredients

  • 1 large cucumber, thinly sliced
  • 1/2 cup cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or chives, chopped
  • Salt and pepper to taste
  • 8 slices white or whole grain bread
  • Optional: lettuce leaves

Instructions

  • 1. In a bowl, mix cream cheese, mayonnaise, lemon juice, dill, salt, and pepper.
  • 2. Spread the mixture evenly on each slice of bread.
  • 3. Layer cucumber slices on half of the bread slices.
  • 4. Top with lettuce leaves if desired.
  • 5. Cover with remaining slices of bread.
  • 6. Cut sandwiches into halves or quarters and serve.

Notes

  • Use a mandoline slicer for thin cucumber slices.
  • Drain cucumber slices if overly watery.
  • Add smoked salmon or turkey for variation.
  • Best served fresh but can be refrigerated.
