Dark Chocolate Raspberry Macarons

  • 1 cup powdered sugar
  • 3/4 cup almond flour
  • 2 tbsp cocoa powder
  • 2 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar
  • Pinch of salt
  • 1/4 cup raspberry jam
  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream

Instructions

  • 1. Sift together powdered sugar, almond flour, and cocoa powder. Set aside.
  • 2. In a clean bowl, whisk egg whites with cream of tartar and salt until foamy.
  • 3. Gradually add granulated sugar and continue whipping until stiff, glossy peaks form.
  • 4. Gently fold the dry mixture into the meringue using a spatula until smooth and ribbon-like.
  • 5. Transfer batter to a piping bag and pipe small circles onto a parchment-lined baking sheet.
  • 6. Tap the tray to remove air bubbles and let macarons rest for 30–45 minutes until tops are dry to the touch.
  • 7. Bake at 300°F (150°C) for 14–16 minutes. Cool completely.
  • 8. For the filling, heat heavy cream and pour over dark chocolate chips. Stir until smooth and glossy.
  • 9. Pipe a ring of chocolate ganache on one shell and fill the center with a small dollop of raspberry jam.
  • 10. Top with another shell, gently pressing to seal. Chill for at least 1 hour before serving.
