Decadent Hawaiian Guava Cake

A delightful cake combining guava and coconut flavors, bringing a taste of Hawaii to your kitchen. Perfect for celebrations or enjoying at home.

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Guava Juice (For batter)
  • 3 large Eggs (Room temperature)
  • 1/2 cup Coconut Oil (Melted)
  • 8 oz Cream Cheese (Room temperature)
  • 1/2 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Cool Whip (Thawed)
  • 2 1/2 cups Guava Nectar or Guava Juice (For glaze)
  • 1/2 cup Granulated Sugar
  • 2 tbsp Cornstarch
  • 1/4 cup Water (For slurry)
  • 1 cup Sweetened Coconut Flakes (For garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the baking pan by greasing and flouring a 9-inch by 13-inch pan.
  3. Mix the batter by combining the strawberry cake mix, guava nectar or juice, eggs, and melted coconut oil in a bowl.
  4. Bake the cake for 30-35 minutes or until a toothpick comes out clean.
  5. Cool the cake in the pan for about 10 minutes before transferring to a wire rack.
  6. Prepare the glaze by combining guava nectar or juice, granulated sugar, and cornstarch in a medium saucepan.
  7. Simmer the glaze mixture over medium heat, stirring continuously until it thickens (5-7 minutes).
  8. Beat the cream cheese in a mixing bowl and add sugar and vanilla extract until well combined.
  9. Fold the thawed Cool Whip into the cream cheese mixture gently.
  10. Assemble the cake by poking holes in the top and pouring the guava glaze over it, then spread the cream cheese mixture on top.
  11. Garnish with sweetened coconut flakes.
  12. Refrigerate the cake for at least 1 hour before serving.

Notes

Serve chilled, and consider adding ice cream or whipped cream for extra delight. Store covered in the refrigerator for 4-5 days.
