Deviled Strawberries Recipe

- 20–24 large fresh strawberries
- Cheesecake filling:
- 225 g cream cheese, softened
- 120 ml heavy whipping cream, cold
- 70 g powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice (optional)
- Pinch of salt
- Topping:
- 3–4 tbsp graham cracker crumbs or crushed biscuits
- Optional: melted chocolate for drizzling
- 1. Rinse and dry the strawberries well. Slice each strawberry in half lengthwise, then cut a small sliver off the back so they sit flat on a tray.
- 2. Use a small knife or melon baller to carefully hollow out a little well in the center of each strawberry half to hold the filling.
- 3. In a mixing bowl, beat the softened cream cheese, powdered sugar, vanilla, lemon juice (if using), and a pinch of salt until completely smooth and creamy.
- 4. In a separate bowl, whip the cold heavy cream to medium-stiff peaks. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- 5. Transfer the cheesecake filling to a piping bag fitted with a star tip (or a zip-top bag with the corner snipped).
- 6. Pipe a generous swirl of cheesecake filling into the hollow of each strawberry half, mounding it slightly above the top.
- 7. Sprinkle the tops with graham cracker crumbs or crushed biscuits. Drizzle with a little melted chocolate if you like.
- 8. Chill for at least 30 minutes before serving for the neatest bites, or serve immediately for a softer texture.
Notes
- Choose large, firm strawberries so they hold plenty of filling and don’t collapse.
- Whip the cream separately, then fold it into the cream cheese for a light, whipped-cheesecake texture.
- Assemble close to serving time so the strawberries stay fresh and the crumbs stay crisp.
- For a twist, flavor the filling with a little cocoa powder, almond extract, or extra lemon zest.
- Leftover filling is great piped into small glasses and topped with berries as a quick mini cheesecake dessert.
