  • 1 apple, diced

  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or coconut oil

Instructions

  • 1. Preheat oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
  • 2. In a large bowl, whisk together milk, eggs, applesauce, maple syrup, vanilla, and melted butter.
  • 3. Add oats, baking powder, cinnamon, nutmeg, and salt — stir to combine.
  • 4. Fold in diced apple.
  • 5. Pour mixture into the baking dish and smooth the top.
  • 6. Bake for 35–40 minutes until golden and set.
  • 7. Let cool slightly before slicing and serving with extra apples or syrup.
