  • Crust:
  • 2 cups chocolate cookie crumbs (Oreo or chocolate biscuits)
  • 1/2 cup unsalted butter, melted
  • Chocolate Cheesecake Filling:
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 8 oz semi-sweet chocolate, melted and cooled
  • 1 tsp vanilla extract
  • Chocolate Topping:
  • 1/2 cup heavy cream
  • 4 oz dark chocolate, chopped
  • 1 tbsp butter (optional, for shine)

Instructions

1. Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.

2. Mix chocolate cookie crumbs with melted butter until combined.

  • 3. Press mixture firmly into the bottom of the pan to form the crust.
  • 4. Bake crust for 10 minutes, then let cool slightly.
  • 5. In a bowl, beat cream cheese and sugar until smooth.
  • 6. Add eggs one at a time, mixing well after each.
  • 7. Mix in sour cream, melted chocolate, and vanilla until creamy.
  • 8. Pour filling over crust and smooth the top.
  • 9. Bake 35–40 minutes until the center is just set.
  • 10. Cool completely, then refrigerate at least 4 hours.
  • 11. Heat heavy cream until just simmering and pour over chopped chocolate.
  • 12. Stir until smooth, add butter if using, then spread over chilled cheesecake.
  • 13. Chill 30 minutes before slicing into bars.
