Earl Grey Blackberry Scones with Lemon Glaze Recipe

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 Earl Grey tea bags (leaves only)
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blackberries
  • Lemon Glaze:
  • 1 cup powdered sugar
  • 1 1/22 tbsp fresh lemon juice
  • 1/2 tsp lemon zest

Instructions

  • 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • 2. Whisk flour, sugar, baking powder, salt, and Earl Grey tea leaves.
  • 3. Cut in cold butter until mixture resembles coarse crumbs.
  • 4. Whisk cream, egg, and vanilla; add to dry ingredients and mix just until combined.
  • 5. Gently fold in blackberries.
  • 6. Turn dough onto a floured surface, shape into an 8-inch circle, and cut into 8 wedges.
  • 7. Bake 18–22 minutes until lightly golden.
  • 8. Cool slightly.
  • 9. Whisk glaze ingredients and drizzle over cooled scones.

Notes

  • Freeze blackberries before mixing to prevent bleeding.
  • Add lemon zest to the dough for extra citrus.
  • Best the day baked; keeps 2 days airtight.
