- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 3 Earl Grey tea bags
- 2 teaspoons powdered gelatin
- 2 tablespoons cold water
- 1 teaspoon vanilla extract
- Zest of 1 lemon or orange (optional)
- Fresh berries or candied citrus for garnish
- 1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5-10 minutes.
- 2. In a saucepan, heat cream, milk, sugar, and Earl Grey tea bags over medium heat until just about to boil.
- 3. Remove from heat, cover, and steep for 10 minutes.
- 4. Remove tea bags, stir in vanilla and lemon/orange zest.
- 5. Discard tea bags. Warm gelatin in microwave 10 seconds until melted, whisk into cream mixture.
- 6. Pour into ramekins or molds. Chill at least 4 hours until set.
- 7. Serve garnished with fresh berries or candied citrus.
