- 1½ lbs lump crab meat (picked clean)
- 3 tbsp butter
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 celery stalks (chopped)
- 2 medium potatoes (peeled, small dice)
- 2 cups seafood stock
- 1 cup heavy cream
- 1 cup whole milk
- 1 tsp Old Bay seasoning
- ½ tsp paprika
- ¼ tsp cayenne (optional)
- 2 tbsp fresh parsley (chopped)
- Salt + pepper to taste
- 1. Melt butter in large pot over medium heat. Sauté onion, celery, garlic 5 mins until soft.
- 2. Add diced potatoes, seafood stock, Old Bay, paprika, cayenne. Simmer 15 mins until potatoes tender.
- 3. Stir in heavy cream + milk. Heat through without boiling (5 mins).
- 4. Gently fold in crab meat. Season with salt/pepper. Simmer 2-3 mins to warm crab.
- 5. Remove heat. Stir in parsley. Serve with crusty bread.
