Easy Chicken Burrito Casserole: How to Make This 30-Minute Dinner

An easy, family-friendly chicken burrito casserole made with tender shredded chicken, rice, beans, salsa, and plenty of melted cheese all baked together for a comforting, flavor-packed meal.

  • 2 cups cooked shredded chicken
  • 2 cups cooked white or brown rice
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 cup corn kernels
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 1/2 cups salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded Mexican-blend cheese
  • Fresh cilantro for garnish

Instructions

  • 1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • 2. Heat olive oil in a skillet over medium heat and sauté onion until softened.
  • 3. Stir in shredded chicken, corn, black beans, salsa, chili powder, cumin, garlic powder, salt, and pepper.
  • 4. Add cooked rice and mix until everything is well combined.
  • 5. Transfer mixture to the prepared baking dish and spread evenly.
  • 6. Top with shredded cheese.
  • 7. Bake uncovered for 25–30 minutes, until bubbly and cheese is melted.
  • 8. Let rest for 5 minutes, garnish with cilantro, and serve.

Notes

  • Swap chicken for ground beef or turkey if desired.
  • Serve with sour cream, avocado, or tortilla chips.
  • This casserole freezes well for up to 2 months.
