Easy Crockpot Chicken Fajitas

A hands-off meal that offers tender chicken and vibrant vegetables, perfect for busy days.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning mix
  • 1 cup chicken broth
  • Tortillas for serving
  • Optional toppings: sour cream, avocado, cheese, salsa

Instructions

  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Layer the sliced red and green bell peppers and onion on top of the chicken.
  3. Sprinkle the fajita seasoning evenly over the chicken and vegetables.
  4. Pour in 1 cup of chicken broth.
  5. Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, remove the chicken and shred it into bite-sized pieces.
  7. Return the shredded chicken back into the slow cooker and mix it with the cooked vegetables.
  8. Warm the tortillas and serve the chicken and vegetable mixture inside with optional toppings.

Notes

You can customize the toppings and use fresh tortillas for a better flavor.
