  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz uncooked short pasta (penne or rotini)
  • 1 cup milk or half & half
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Instructions

  • 1. Season chicken with Italian seasoning, garlic powder, salt, and pepper.
  • 2. Heat olive oil in a large deep skillet over medium-high heat. Add chicken and cook until browned and cooked through; remove to a plate.
  • 3. In the same skillet, add butter and minced garlic. Cook 1 minute until fragrant.
  • 4. Pour in chicken broth and bring to a simmer. Add pasta, reduce heat, cover, and cook 10-12 minutes, stirring occasionally, until pasta is al dente.
  • 5. Stir in milk and Parmesan until melted and creamy.
  • 6. Return cooked chicken to the pan and toss to coat in sauce.
  • 7. Sprinkle with chopped parsley and adjust seasoning to taste before serving.

Notes

  • Use freshly grated Parmesan so the sauce melts smoothly.
  • Thin the sauce with a splash of broth or milk if it gets too thick.
  • Great with a squeeze of lemon or red pepper flakes for extra brightness.
