- 4 brioche buns, toasted
- 6 large eggs
- 2 tbsp heavy cream or milk
- 2 tbsp butter
- 4 slices crispy bacon (or turkey bacon)
- 4 slices cheddar or American cheese
- 1 tbsp chives, finely chopped (optional)
- Salt and pepper, to taste
- 2 tbsp mayonnaise
- 1 tsp sriracha
- 1. In a small bowl, mix mayonnaise and sriracha to make the spicy mayo; set aside.
- 2. In another bowl, whisk eggs, cream, salt, and pepper until smooth.
- 3. Melt butter in a nonstick skillet over low heat.
- 4. Pour in eggs and gently stir with a spatula until just set and creamy.
- 5. Remove from heat and fold in chives if using.
- 6. Assemble each sandwich: spread spicy mayo on toasted brioche, top with cheese, scrambled eggs, and bacon.
- 7. Close the sandwich and serve warm.
Notes
- Use low heat for soft, custardy eggs — just like Eggslut’s signature style.
- Swap bacon for avocado or sautéed mushrooms for a vegetarian version.
- Brioche buns give the perfect buttery texture, but English muffins work too.
