Eggslut Breakfast Sandwich

This Eggslut-style Breakfast Sandwich features silky soft scrambled eggs, gooey melted cheese, crispy bacon, and creamy sriracha mayo all tucked inside a warm brioche bun. A restaurant-worthy breakfast you can easily make at home!

Ingredients

  • 4 brioche buns, toasted
  • 6 large eggs
  • 2 tbsp heavy cream or milk
  • 2 tbsp butter
  • 4 slices crispy bacon (or turkey bacon)
  • 4 slices cheddar or American cheese
  • 1 tbsp chives, finely chopped (optional)
  • Salt and pepper, to taste
  • 2 tbsp mayonnaise
  • 1 tsp sriracha

Instructions

  • 1. In a small bowl, mix mayonnaise and sriracha to make the spicy mayo; set aside.
  • 2. In another bowl, whisk eggs, cream, salt, and pepper until smooth.
  • 3. Melt butter in a nonstick skillet over low heat.
  • 4. Pour in eggs and gently stir with a spatula until just set and creamy.
  • 5. Remove from heat and fold in chives if using.
  • 6. Assemble each sandwich: spread spicy mayo on toasted brioche, top with cheese, scrambled eggs, and bacon.
  • 7. Close the sandwich and serve warm.

Notes

  • Use low heat for soft, custardy eggs — just like Eggslut’s signature style.
  • Swap bacon for avocado or sautéed mushrooms for a vegetarian version.
  • Brioche buns give the perfect buttery texture, but English muffins work too.
