Espresso Chocolate Chip Cookies

  • 1 cup unsalted butter
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon espresso grounds
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the unsalted butter over medium heat until golden brown.
  3. Mix together the flour, baking soda, and salt in a bowl.
  4. Combine the browned butter, brown sugar, and granulated sugar in a large bowl and mix until smooth.
  5. Add the espresso grounds and vanilla extract, blending well.
  6. Mix in the eggs one at a time.
  7. Combine the dry ingredients with the wet mixture, stirring gently.
  8. Fold in the chocolate chips evenly.
  9. Prepare a baking sheet lined with parchment paper and drop spoonfuls of dough onto it.
  10. Bake for 10-12 minutes until edges are golden, and the centers are slightly soft.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
