  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Butter or oil for cooking
  • Maple syrup and fresh fruit for serving

Instructions

  • 1. Mash bananas in a bowl until smooth.
  • 2. Stir in cottage cheese, eggs, and vanilla.
  • 3. Add oats, baking powder, cinnamon, and salt. Mix until combined.
  • 4. Heat a skillet over medium heat with butter or oil.
  • 5. Scoop batter into small pancakes and cook until bubbles form, then flip and cook until golden.
  • 6. Serve warm with maple syrup and fruit.

Notes

  • For extra protein, add 1 tbsp protein powder.
  • Make smaller pancakes for easier flipping.
  • These freeze well—just reheat in the toaster.
