Fluffy Cottage Cheese Blueberry Cloud Bread

  • 3 tablespoons cottage cheese
  • 1 tablespoon honey
  • 1/4 teaspoon cream of tartar
  • 1/2 cup fresh blueberries
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks into two different mixing bowls.
  3. Mix the egg yolks with cottage cheese, honey, vanilla extract, and a pinch of salt until smooth.
  4. Whip the egg whites with cream of tartar until stiff peaks form.
  5. Combine the egg yolk mixture with the whipped egg whites gently using a spatula.
  6. Fold in the fresh blueberries carefully to distribute them evenly.
  7. Scoop the batter onto the prepared baking sheet, forming small mounds.
  8. Bake for 25-30 minutes until golden brown and firm to the touch.
  9. Cool on a wire rack before serving.
