Fluffy Eggplant Rollatini Bake

A delightful and nutritious Italian dish featuring layers of tender eggplant, ricotta cheese, and mozzarella, perfect for family dinners.

  • 2 medium eggplants, sliced lengthwise
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the eggplants by slicing them lengthwise into thin strips.
  3. Grill or bake the eggplant slices until tender, about 10-15 minutes.
  4. Combine in a large bowl the ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, egg, garlic powder, dried basil, salt, and black pepper.
  5. Assemble by spreading marinara sauce in the baking dish and rolling the eggplant filled with cheese mixture.
  6. Add remaining marinara sauce and mozzarella cheese on top.
  7. Bake for 25-30 minutes until cheese is bubbly and golden.
  8. Garnish with fresh basil before serving.

Notes

For added flavor, sprinkle fresh herbs or drizzle olive oil before serving.
