Oven-Roasted French Garlic Chicken Recipe

A classic oven-roasted French garlic chicken made with crispy skin, tender meat, and a rich pan sauce infused with garlic, herbs, and white wine. Elegant yet simple comfort food.

  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil or butter
  • 1 whole head garlic, cloves separated and lightly crushed
  • 1 small onion or shallot, sliced
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  • 1. Preheat oven to 400°F (200°C).
  • 2. Pat chicken dry with paper towels and season generously with salt, pepper, and paprika.
  • 3. Heat olive oil or butter in a large oven-safe skillet or roasting pan over medium heat.
  • 4. Brown chicken on all sides until golden, about 6–8 minutes total.
  • 5. Add garlic cloves and onion around the chicken.
  • 6. Sprinkle thyme and rosemary over the chicken.
  • 7. Pour in white wine and chicken broth.
  • 8. Transfer pan to the oven and roast uncovered for 45–55 minutes, basting occasionally, until internal temperature reaches 165°F (74°C).
  • 9. Remove from oven and drizzle with lemon juice.
  • 10. Rest chicken 10 minutes before carving.
  • 11. Garnish with fresh parsley and serve with pan juices.

Notes

  • Serve with roasted potatoes, crusty bread, or green beans.
  • Use bone-in chicken pieces instead of a whole chicken if preferred.
  • Leftover garlic cloves are delicious spread on bread.
