French Garlic Soup Recipe

A classic French garlic soup that’s light, comforting, and deeply flavorful. Made with slowly simmered garlic cloves, herbs, and broth, then finished with egg yolks for a silky, nourishing texture.

  • 2 heads garlic, cloves peeled
  • 2 tbsp olive oil or unsalted butter
  • 1 small onion, finely chopped
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 2 sprigs fresh thyme (or 1/2 tsp dried thyme)
  • Salt and black pepper, to taste
  • 2 egg yolks
  • 1/4 cup grated Parmesan cheese
  • 1 tsp lemon juice (optional)
  • Crusty bread or baguette, for serving

Instructions

  • 1. Heat olive oil or butter in a large pot over medium heat.
  • 2. Add garlic cloves and onion; cook gently for 5–7 minutes until soft but not browned.
  • 3. Pour in broth, add bay leaf and thyme, and bring to a gentle simmer.
  • 4. Simmer uncovered for 20–25 minutes until garlic is very tender.
  • 5. Remove bay leaf and thyme sprigs.
  • 6. In a bowl, whisk egg yolks with Parmesan cheese.
  • 7. Slowly ladle a bit of hot soup into the egg mixture while whisking to temper.
  • 8. Stir the tempered mixture back into the soup and heat gently (do not boil) until slightly thickened.
  • 9. Season with salt, pepper, and lemon juice if using.
  • 10. Serve hot with crusty bread.

Notes

  • Do not boil after adding egg yolks to prevent curdling.
  • For a smoother soup, blend partially or fully before adding eggs.
  • Traditionally served as a restorative soup.
