French Toast Fried Chicken Sandwich

A delightful combination of crispy fried chicken and sweet French toast, layered into a sandwich with a flavorful apricot honey sauce.

  • 4 Chicken Thighs
  • 2 cups self-rising flour
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1/2 tbsp Tony’s seasoning
  • 1 cup buttermilk
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 2 large eggs (add in after marinated when ready to fry)
  • 1 cup apricot jam
  • 1 tbsp chili sauce
  • 1/4 cup honey
  • 1/2 cup bourbon
  • Dash sriracha
  • 3 tbsp unsalted butter (for frying)
  • 4 slices brioche bread
  • 4 large eggs (for French toast)
  • 1/2 cup milk
  • 1 tsp almond extract (or vanilla)
  • 1 tsp cinnamon
  • Pinch nutmeg
  • Pinch salt

Instructions

  1. Prep the Chicken: Begin by washing and cleaning the chicken thighs. Trim off any extra fat and pat the chicken dry with a paper towel.
  2. Marinate the Chicken: In a medium-sized bowl, add the chicken thighs. Pour in 1 cup of buttermilk, add 1/2 teaspoon of salt, and 1/2 teaspoon of white pepper. Cover and let it marinate in the refrigerator for at least 30 minutes.
  3. Heat the Oil: In a large Dutch oven, heat about 1 ½ inches of vegetable oil until it reaches 350°F.
  4. Prepare the Flour Mixture: In a bowl, add 2 cups of self-rising flour, 1 tablespoon of onion powder, 1 tablespoon of garlic powder, 1 tablespoon of paprika, and 1/2 tablespoon of Tony’s seasoning. Mix well and set aside.
  5. Coat the Chicken: Remove the chicken from the buttermilk mixture, dip it into the flour mixture, and coat it thoroughly.
  6. Fry the Chicken: Carefully lower two chicken thighs into the hot oil. Fry until golden brown, about 7 minutes per side. Rest on a cooling rack over a paper towel.
  7. Make the Sauce: Combine 1 cup of apricot jam, 1 tablespoon of chili sauce, 1/4 cup of honey, 1/2 cup of bourbon, and a dash of sriracha in a pot. Simmer for 5-7 minutes.
  8. Prepare French Toast: Whisk together 4 large eggs, 1/2 cup of milk, 1 teaspoon of almond extract, 1 teaspoon of cinnamon, a pinch of nutmeg, and a pinch of salt.
  9. Cook the French Toast: In a skillet, melt 3 tablespoons of unsalted butter over medium heat. Dip brioche bread into the egg mixture and cook until golden brown, about 2-3 minutes on each side.
