Fresh Lemon Poppyseed Rolls Recipe

  • For the dough:
  • 3/4 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 3 tbsp unsalted butter, melted
  • 1 tbsp lemon zest
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp poppy seeds
  • For the filling:
  • 1/4 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  • 1. Combine warm milk, yeast, and sugar; let stand 5–10 minutes until foamy.
  • 2. Mix in egg, melted butter, and lemon zest.
  • 3. Add flour, salt, and poppy seeds; mix until a soft dough forms.
  • 4. Knead 8–10 minutes until smooth and elastic.
  • 5. Place in a greased bowl, cover, and let rise 1–1½ hours until doubled.
  • 6. Roll dough into a rectangle on a floured surface.
  • 7. Spread softened butter over dough.
  • 8. Mix sugar, lemon zest, and lemon juice; sprinkle evenly.
  • 9. Roll up tightly and slice into 10–12 rolls.
  • 10. Arrange in a greased baking dish; cover and rise 30 minutes.
  • 11. Bake at 350°F (175°C) for 22–25 minutes until lightly golden.
  • 12. Whisk glaze ingredients and drizzle over warm rolls.

Notes

  • Fresh lemon zest gives the best flavor.
  • Make ahead and refrigerate overnight before the second rise.
  • Store covered at room temperature for up to 2 days.
