Fresh Raspberry Tiramisu Recipe

A fresh and fruity twist on classic tiramisu made with juicy raspberries, creamy mascarpone, and delicate ladyfingers. Light, elegant, and perfect for spring and summer gatherings.

Ingredients

  • 2 cups fresh raspberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice

  • Cream Layer:
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mascarpone cheese
  •  
  • For Assembly:
  • 1 package ladyfinger cookies
  • 1/2 cup raspberry juice or raspberry liqueur (optional, diluted)
  • Fresh raspberries for topping
  • White chocolate shavings or cocoa powder (optional)

Instructions

  • 1. In a small bowl, gently mash raspberries with sugar and lemon juice. Set aside to release juices.
  • 2. In a large bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  • 3. Gently fold mascarpone cheese into the whipped cream until smooth and creamy.
  • 4. Quickly dip ladyfingers into raspberry juice (do not soak).
  • 5. Arrange a layer of dipped ladyfingers in the bottom of a dish.
  • 6. Spread half of the mascarpone cream over the ladyfingers.
  • 7. Spoon half of the raspberry mixture evenly on top.
  • 8. Repeat layers with remaining ladyfingers, cream, and raspberries.
  • 9. Cover and refrigerate for at least 4 hours or overnight.
  • 10. Garnish with fresh raspberries and white chocolate or cocoa before serving.

Notes

  • Use ripe, fresh raspberries for best flavor.
  • Chill overnight for the best texture.
  • You can substitute strawberries or mixed berries if desired.
