Fresh Vegetable Tortilla Roll Ups

A fun and colorful snack or appetizer made with fresh vegetables and cream cheese, perfect for parties or as a light meal.

Ingredients

  • 4 large flour tortillas
  • 1 cup cream cheese, softened
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup bell peppers, thinly sliced (any color)
  • 1 cup spinach or lettuce leaves
  • Salt and pepper to taste

Instructions

  1. Spread a layer of cream cheese on each tortilla, covering it evenly.
  2. Sprinkle the shredded carrots over the cream cheese on each tortilla.
  3. Add a layer of cucumber slices and bell pepper slices on top of the carrots.
  4. Place some spinach or lettuce leaves over the vegetables.
  5. Lightly season with salt and pepper.
  6. Carefully roll each tortilla tightly from one side to the other.
  7. Slice each rolled tortilla into bite-sized pieces.
  8. Arrange the roll ups on a serving plate.

Notes

For a healthier option, use whole wheat or spinach tortillas. You can serve with a dip like ranch or hummus for extra flavor.
