Funfetti Cinnamon Rolls

Delightful and festive cinnamon rolls filled with colorful sprinkles and topped with creamy frosting, perfect for birthdays and special occasions.

  • ½ cup warm water (about 110°F)
  • ½ cup whole milk (room temperature)
  • 2 ¼ teaspoons dry active yeast
  • ¼ cup + 1 tablespoon granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon kosher salt
  • 4 cups all-purpose flour
  • 5 tablespoons unsalted butter (room temperature)
  • ½ cup confetti sprinkles
  • ⅓ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • Pinch kosher salt
  • 4 oz cream cheese
  • ¼ cup unsalted butter (room temperature)
  • 1 ½ cups powdered sugar
  • Pinch kosher salt
  • Additional confetti sprinkles, to garnish

Instructions

  1. Activate the yeast: In a bowl, sprinkle the yeast over warm water and milk. Add 1 tablespoon of sugar. Stir lightly to combine and let it sit for about 5-7 minutes.
  2. Mix the wet ingredients: In the bowl of a stand mixer, add the activated yeast mixture, remaining sugar, the whole egg, and the egg yolk.
  3. Combine dry ingredients: In another bowl, mix kosher salt into the flour, then add 2 cups of the flour to the mixing bowl with the wet ingredients.
  4. Combine: Using the dough hook attachment, mix everything together on low speed. Gradually add another cup of flour and softened butter, one tablespoon at a time.
  5. Knead to smooth: Gradually add the remaining cup of flour until the dough is smooth and pulls away from the sides of the bowl.
  6. Add sprinkles: Gently fold in the confetti sprinkles until evenly distributed.
  7. Rise: Transfer the dough to a lightly greased bowl, cover it with plastic wrap, and let it rise for about an hour until doubled in size.
  8. Punch down: Once risen, punch down the dough to release the air and move it to a lightly floured surface.
  9. Roll out the dough: Roll the dough into a rectangle measuring about 20 x 14 inches.
  10. Butter: Spread ⅓ cup of softened butter evenly over the rolled-out dough.
  11. Mix filling: In a medium bowl, combine granulated sugar, brown sugar, and cinnamon.
  12. Spread filling: Sprinkle the cinnamon sugar mixture evenly over the butter-covered dough, pressing it gently into the dough.
  13. Add salt: Sprinkle a pinch of kosher salt onto the sugar filling.
  14. Roll up: Beginning from the long side of the rectangle, carefully roll the dough into a log shape.
  15. Slice the rolls: Cut the log into 12 equal portions and place in a greased 9×12-inch baking pan.
  16. Prepare to rise again: Cover with plastic wrap and let rise for 30-45 minutes.
  17. Preheat the oven: Set your oven to 350°F (175°C).
  18. Bake: Remove plastic wrap and bake for 30-35 minutes, or until golden brown.
  19. Rest: Allow the rolls to cool for about 5 minutes before frosting.
  20. Mix frosting: Beat together cream cheese and remaining butter until smooth. Gradually add sifted powdered sugar until thick and fluffy.
  21. Frost the rolls: Spread cream cheese frosting over warm cinnamon rolls and garnish with additional confetti sprinkles.

Notes

Store leftovers in an airtight container. Rolls stay fresh for 2-3 days at room temp or up to a week in the fridge.
