Garlic Butter Steak & Zucchini Delight features tender seared sirloin steak bites swimming in sizzling garlic butter sauce tossed with crisp zucchini noodles. Quick 20-minute low-carb dinner with restaurant sear and bright lemon-parsley finish.

  • lbs sirloin steak, cut into 1-inch cubes
  • 4 medium zucchini, spiralized (4 cups zoodles)
  • 4 tbsp unsalted butter, divided
  • 6 garlic cloves, minced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • ⅓ cup beef broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • Salt & black pepper to taste
  • ¼ cup chopped parsley
  • Parmesan for serving

Instructions

  • 1. Pat steak cubes completely dry. Season generously with salt, pepper, Italian seasoning. Heat 1 tbsp olive oil in large skillet over high heat until smoking.
  • 2. Add steak in single layer (work in batches). Sear undisturbed 2 minutes until deep crust forms. Flip; sear 1-2 minutes more to medium-rare. Remove to plate.
  • 3. Lower heat to medium. Add 2 tbsp butter, garlic, red pepper flakes; cook 30 seconds until fragrant. Deglaze with beef broth, scraping browned bits. Add lemon juice.
  • 4. Add zucchini noodles, remaining 2 tbsp butter. Toss 2-3 minutes until just tender. Add steak back with juices; toss to coat in sauce 1 minute. Remove from heat.
  • 5. Stir in parsley. Serve immediately with parmesan.

  • High-heat sear essential for steak crust; don’t crowd pan.
  • Pat steak very dry before seasoning for proper browning.
  • Zucchini noodles cook fast; don’t overcook to mush.
  • Sirloin perfect balance tender/flavorful; ribeye richer option.
