Garlic Herb Chicken

A tender and flavorful chicken dish with garlic and herbs, served on a bed of creamy mashed potatoes.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper generously.
  2. In a small bowl, mix together the minced garlic, chopped parsley, and thyme leaves. Rub this herb mixture all over the chicken breasts and let sit for 10 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 5-6 minutes until golden-brown. Flip and cook for another 5-6 minutes.
  4. Add butter to the pan, basting the chicken with the melted butter and pan juices, until internal temperature reaches 165°F. Move to a plate and cover with foil.
  5. In the same skillet, mix in brown sugar and balsamic vinegar, stirring until sugar dissolves and caramelizes, about 2 minutes. Pour in chicken broth and deglaze the pan, cooking until sauce reduces by half, about 5-7 minutes.
  6. Peel and cut potatoes into uniform pieces. Boil in salted water until fork-tender, then drain and mash with butter and heavy cream. Season to taste.
  7. On each plate, place a generous serving of mashed potatoes, top with a chicken breast, and drizzle with reduced pan sauce. Garnish with fresh herbs if desired. Serve hot.

Notes

For extra flavor, marinate chicken in the herb mixture before cooking. Use a meat thermometer to ensure chicken is cooked to 165 degrees.
