  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your baking pans by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix in a large mixing bowl the unsweetened cocoa powder, all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  3. Add the two large eggs, whole milk, vegetable oil, and vanilla extract; mix until well combined.
  4. Incorporate boiling water carefully into the batter; mix thoroughly until combined.
  5. Bake for about 30-35 minutes, checking doneness with a toothpick.
  6. Cool the cakes in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  7. Make the frosting by melting unsalted butter in a saucepan, then adding brown sugar, milk, and vanilla extract.
  8. Add sweetened shredded coconut and chopped pecans once removed from heat; mix until thickened.
  9. Assemble by frosting between and on top of the cake layers once completely cooled.
  10. Slice, serve and enjoy!
