Greek Chicken Bowls

Flavor-packed Greek Chicken Bowls with marinated grilled chicken, tzatziki sauce, fresh vegetables, feta cheese, and lemony rice. A complete Mediterranean meal perfect for meal prep or healthy dinners.

  • For the chicken:
  • 1 1/2 lbs chicken breast, cubed
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper
  • Bowl ingredients:
  • 2 cups cooked basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, sliced
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta
  • Tzatziki sauce for serving

Instructions

  • 1. Marinate chicken cubes with olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for 30 minutes or overnight.
  • 2. Cook marinated chicken in a skillet or grill pan over medium-high heat until cooked through.
  • 3. Assemble bowls: layer rice, grilled chicken, tomatoes, cucumber, red onion, olives, and feta.
  • 4. Drizzle with tzatziki sauce and serve immediately.

Notes

  • Make tzatziki ahead for best flavor.
  • Use quinoa or couscous instead of rice.
  • Great for meal prep (store components separately).
  • Add hummus or pita chips for extra crunch.
