Greek Healing Soup Recipe

A soothing Greek-style healing soup made with lemon, chicken, rice, and simple seasonings for a cozy, nourishing bowl that’s perfect when you’re feeling under the weather.

Ingredients

  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1/2 cup uncooked rice (or orzo)
  • 2 eggs
  • 2 lemons, juiced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • 1. Bring chicken broth to a simmer in a large pot.
  • 2. Add rice (or orzo) and cook until tender.
  • 3. Stir in shredded chicken, garlic, oregano, salt, and pepper.
  • 4. In a separate bowl, whisk eggs and lemon juice together.
  • 5. Slowly ladle some hot broth into the egg mixture while whisking to temper.
  • 6. Pour egg-lemon mixture back into the soup and stir gently.
  • 7. Simmer on low (do not boil) for 3–4 minutes until slightly thickened.
  • 8. Garnish with fresh parsley and serve warm.

Notes

  • This soup is inspired by Greek avgolemono.
  • Use rotisserie chicken to save time.
  • Adjust lemon amounts to taste for extra brightness.
