  • Salad:
  • 2 cups green cabbage, finely chopped
  • 1 cup cucumber, finely chopped
  • 1/2 cup scallions, sliced
  • 1/4 cup fresh parsley
  • 1/4 cup fresh basil
  • 1/4 cup fresh chives
  •  
  • Green Goddess Dressing:
  • 1/3 cup Greek yogurt or mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 small garlic clove
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tbsp chives
  • Salt and black pepper, to taste

  • For Assembly:
  • 4 slices sourdough or sandwich bread, toasted
  • Butter or olive oil (optional)
  • Sliced avocado or cheese (optional)

Instructions

  • 1. In a large bowl, combine cabbage, cucumber, scallions, parsley, basil, and chives.
  • 2. In a blender or food processor, blend yogurt (or mayo), olive oil, lemon juice, garlic, herbs, salt, and pepper until smooth and green.
  • 3. Pour dressing over the chopped vegetables and toss until evenly coated.
  • 4. Toast bread slices and spread with butter or olive oil if desired.
  • 5. Pile the green goddess salad generously onto one slice of bread.
  • 6. Add avocado or cheese if using, then top with another slice of bread.
  • 7. Slice and serve immediately.

Notes

  • Chop vegetables very finely for the best texture.
  • Add chickpeas or white beans for extra protein.
  • The salad keeps well refrigerated for up to 2 days.
