Grilled Steak Bowl with Creamy Sauce & Grilled Zucchini

  • 1 1/2 lbs flank steak or sirloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper
  • For the grilled zucchini:
  • 2 medium zucchini, sliced lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper
  • For the creamy sauce:
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill or parsley
  • Salt and pepper
  • Bowl base:
  • 2 cups cooked rice or quinoa

Instructions

  • 1. Mix olive oil, garlic, smoked paprika, salt, and pepper. Rub on steak and let marinate 30 minutes.
  • 2. Preheat grill to medium-high. Grill steak 4-5 minutes per side for medium-rare. Rest 5 minutes, then slice.
  • 3. Brush zucchini with olive oil, season, and grill 3-4 minutes per side until charred.
  • 4. Mix sour cream, mayonnaise, lemon juice, garlic, dill, salt, and pepper for creamy sauce.
  • 5. Assemble bowls: rice base, sliced steak, grilled zucchini, and drizzle with creamy sauce.
