  • 1 tbsp olive oil
  • 2 medium zucchini, sliced or diced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish

Instructions

  • 1. Heat olive oil in a large skillet over medium heat.
  • 2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  • 3. Stir in diced onion and garlic; cook until softened and fragrant.
  • 4. Add zucchini, Italian seasoning, paprika, salt, black pepper, and red pepper flakes.
  • 5. Cook, stirring occasionally, until zucchini is tender but not mushy.
  • 6. Remove from heat and sprinkle with Parmesan cheese.
  • 7. Garnish with fresh herbs and serve hot.

Notes

  • Serve over rice, quinoa, or cauliflower rice.
