Ground Turkey Rice Bowls with Bang Bang Sauce

Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine rice
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 cup shredded carrots
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • Salt and pepper to taste
  • For the Bang Bang Sauce:
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp lime juice

Instructions

  • 1. In a skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
  • 2. Add ground turkey and cook until browned, breaking it apart with a spatula.
  • 3. Stir in bell pepper and carrots, cooking until softened.
  • 4. Add soy sauce, rice vinegar, honey, salt, and pepper; cook 2–3 minutes.
  • 5. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice to make the Bang Bang Sauce.
  • 6. Serve ground turkey over rice and drizzle generously with the Bang Bang Sauce.
  • 7. Garnish with green onions or sesame seeds if desired.

Notes

  • For a lighter version, use Greek yogurt instead of mayonnaise.
  • You can swap jasmine rice with quinoa or cauliflower rice.
  • Adjust spice level by reducing or increasing the sriracha amount.
