- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 cup shredded carrots
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- Salt and pepper to taste
- For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp lime juice
- 1. In a skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
- 2. Add ground turkey and cook until browned, breaking it apart with a spatula.
- 3. Stir in bell pepper and carrots, cooking until softened.
- 4. Add soy sauce, rice vinegar, honey, salt, and pepper; cook 2–3 minutes.
- 5. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice to make the Bang Bang Sauce.
- 6. Serve ground turkey over rice and drizzle generously with the Bang Bang Sauce.
- 7. Garnish with green onions or sesame seeds if desired.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise.
- You can swap jasmine rice with quinoa or cauliflower rice.
- Adjust spice level by reducing or increasing the sriracha amount.
