Ground Turkey Taco Pasta

A delicious and easy meal that combines the flavors of tacos with the comfort of pasta, perfect for busy weeknights.

  • 8 oz pasta
  • 1 lb lean ground turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup cream cheese
  • 1 cup shredded cheese
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Chopped parsley or cilantro for garnish

Instructions

  1. Cook the pasta: Boil water in a large pot and add pasta. Cook for 8-10 minutes until al dente, then drain.
  2. Cook the ground turkey: Heat olive oil in a skillet, add ground turkey, and cook until browned, about 6-8 minutes.
  3. Add seasoning and tomatoes: Sprinkle taco seasoning over the turkey and add diced tomatoes. Stir and let simmer.
  4. Mix in the cream cheese: Cut cream cheese into cubes and stir until melted and creamy.
  5. Combine with pasta: Add cooked pasta and corn to the skillet, stir until coated, and heat through.
  6. Add shredded cheese: Sprinkle cheese on top, cover, and cook for 3-4 minutes until melted.
  7. Season to taste: Adjust salt and pepper according to preference.
  8. Garnish and serve: Serve hot, garnished with parsley or cilantro.

Notes

Great for meal prep and leftovers. Can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
