- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 1/2 tsp butter extract
- 1/2 cup butterscotch chips
- 1/2 cup white chocolate chips
- For the Butterbeer Drizzle:
- 1/4 cup butterscotch chips
- 1 tbsp heavy cream
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a bowl, whisk flour, baking soda, and salt; set aside.
- 3. In another bowl, combine melted butter, brown sugar, and white sugar until smooth.
- 4. Add egg, egg yolk, vanilla, and butter extract; mix until creamy.
- 5. Gradually stir in dry ingredients until just combined.
- 6. Fold in butterscotch and white chocolate chips.
- 7. Scoop dough onto the baking sheet and bake 9–11 minutes, until edges are golden.
- 8. Cool completely before drizzling.
- 9. For the drizzle: melt butterscotch chips with heavy cream, stir smooth, and drizzle over cookies.

- Add a pinch of cinnamon for extra warmth.
