Harry Potter Butterbeer Cookies

Soft, buttery cookies inspired by the famous Butterbeer from the Wizarding World sweet, butterscotch-infused, and topped with a magical butterscotch drizzle.

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 1/2 tsp butter extract
  • 1/2 cup butterscotch chips
  • 1/2 cup white chocolate chips
  • For the Butterbeer Drizzle:
  • 1/4 cup butterscotch chips
  • 1 tbsp heavy cream

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • 2. In a bowl, whisk flour, baking soda, and salt; set aside.
  • 3. In another bowl, combine melted butter, brown sugar, and white sugar until smooth.
  • 4. Add egg, egg yolk, vanilla, and butter extract; mix until creamy.
  • 5. Gradually stir in dry ingredients until just combined.
  • 6. Fold in butterscotch and white chocolate chips.
  • 7. Scoop dough onto the baking sheet and bake 9–11 minutes, until edges are golden.
  • 8. Cool completely before drizzling.
  • 9. For the drizzle: melt butterscotch chips with heavy cream, stir smooth, and drizzle over cookies.

Notes

  • Add a pinch of cinnamon for extra warmth.
  • Store in an airtight container for up to 5 days.
  • For extra magic, sprinkle with edible gold dust or sea salt after drizzling.
